Choose sliced, whole, or butterflied backstraps

Country Boy Trades offers backstraps sliced, whole, or butterflied. Tell the shop which preparation you prefer when discussing your cut sheet.

For sliced or butterflied cuts, discuss thickness and package quantity. For a whole piece, discuss its package size. Neither an exact thickness nor a guaranteed amount is advertised on this website.

Separate cut preference from safety

Keeping a cut whole does not remove the need for clean handling and temperature control. Keep raw meat refrigerated until preparation and thaw frozen portions safely, rather than leaving them on a counter.

For a conservative venison cooking target, this site follows Penn State Extension’s Canning and Freezing Venison guidance of at least 160°F. Measure with a food thermometer; cooking time and appearance are not substitutes for temperature.

Confirm the order before cutting

You get your own deer back, not someone else’s. Confirm the processing price and your preferred cut instructions before cutting begins. The site does not promise a particular yield, package size, or meat-identification process.
